I have held two events so far for this project, one of which was a fundraiser. At both, I served a vegetarian version of Ghanaian groundnut stew/soup. Happily, it was well received and since then, I have been asked several times for the recipe.

It is a variation from the „traditional“ groundnut stew, which is made with chicken. I first had it when I was in Ghana recently at my aunt’s home. I thought it was fantastic.

And so, without further ado, Vegetarian Groundnut Stew:






Basically, you put all these ingredients into one large pot, add the requisite amount of water and bring to the boil. You should stir every now and then to ensure the peanut butter doesn’t stick to the bottom of the pot. Add salt to taste. (I put in 1 tablespoon of Kräutersalz to my pot). This should easily serve 4-6 people.


And if you want to make it a soup, just add more water. Really simple and quite delicious.
